Blueberry Lemon Overnight Protein Oats For One
Ingredients
- 1/2 cup rolled oats
- 1/2 cup almond milk or milk of choice
- 1/4 cup Greek-style yogurt, plain or vanilla
- 1 tablespoon chia seeds
- 1 tablespoon honey or maple syrup
- 1 scoop protein or collagen peptides powder
- 1/3 cup blueberries mashed with the back of a fork
- 1 lemon, juice and zest
Instructions
- Add all ingredients to a medium mixing bowl. Stir until all ingredients are combined. Cover the bowl (or individual containers) and refrigerate for at least 2 hours or overnight.When ready to serve, serve as thick overnight oats or add another ¼ cup of milk for a thinner consistency. Top with more yogurt, fresh lemon slices or more lemon zest!Before serving, top with an extra dollop of Greek yogurt, extra blueberries and lemon zest, if you would like.Overnight oats will keep fresh in the fridge for up to about 4 to 5 days. Give them a good stir and add a splash of almond milk, if they have been sitting for a couple of days.
