Lemon Drizzle Protein Bars

Ingredients

  • 1 cup rolled oats
  • 1/4 cup almond flour
  • 1/4 cup desiccated coconut
  • 1/4 cup cashew butter
  • 1/4 cup protein or collagen peptides powder
  • 2-3 tablespoons honey or maple syrup (to taste)
  • 2 tablespoons coconut oil, melted
  • 1-2 lemons, juice and zest – depending on how lemon-y you prefer

White Chocolate Drizzle

  • 1/4 cup white chocolate chips
  • 1 teaspoon coconut oil

Instructions

  • Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    In a medium bowl, mix oats, almond flour, coconut, protein powder, honey, lemon juice and zest together until well combined. Taste test and add more lemon or honey if you think it needs it.
    Scoop mixture out into the lined pan and smooth out evenly with a spatula or back of a spoon. Place in the freezer for about 10 minutes to firm up before adding the chocolate drizzle topping.
    Once set, lift out using the parchment paper handles, cut into 10 bars or more smaller squares.

White Chocolate Drizzle

  • Place chocolate chips and coconut oil in small dish and microwave with 15 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once melted, drizzle over the chilled bars with a spoon, then return to the refrigerator or freezer until set (about 15-20 minutes).
    Store in fridge for up to 1 week or freezer for up to 3 months.
