I’m always trying to come up with easy dessert recipes and these healthy no-bake coconut bites fit the bill. They are chewy, nutritious, and delicious – are no bake and the perfect make-ahead treat! I love making a batch at the beginning of the week and grabbing one or two for an afternoon snack or healthy dessert!

You may have heard protein snack balls referred to as energy balls, bliss balls, power balls, protein balls, or bliss bites. They are typically made with whole, raw ingredients – including dates, nuts, protein powder, coconut, seeds, and more.

Its such an easy way to eat something sweet, small, and filling and they contain plenty of healthy fats, fiber, and protein. Plus no added refined sugar! They have a soft filling, a firm outer shell, and a subtle sweetness that will cure any cravings. They are just the best ever snack!

Made with 3 different types of coconut that will fix your sweet tooth and fill you up with 8 grams of protein per ball. This recipe is the perfect treat if you love coconut like I do.  I’m obsessed with coconuts, they are my favorite ingredient in desserts and healthy snacks.

The world is going coconuts. Following the popularity of coconut water, a broad spectrum of foods derived from the humble coconut is available. It now comes in a variety of forms from water to milk, cream, butter, oil, flour and shredded allowing for a variety of creative ways to add coconut to a healthy diet.

Coconut contains a unique type of medium chain saturated fat called lauric acid that research shows raises HDL or “good” cholesterol levels, which lowers overall heart disease risk.

Coconut Protein Snack Bites

These healthy coconut bites are an easy no bake dessert recipe perfect for when you just want a bite sized serving of something sweet! They have a shredded coconut filling before being topped with coconut butter, truly a coconut lovers dream!

Ingredients

  • 1 1/2 cups desiccated coconut
  • 1/3 cup coconut oil, melted
  • 1/4 cup protein or collagen peptides powder
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract

Coconut Butter Coating

  • 1/2 cup coconut butter, store bought or homemade healthy recipe below in notes
  • 1 tablespoon honey or maple syrup
  • 6-8 tablespoons water
  • 1/2 teaspoon vanilla extract

Instructions

  • Line a baking sheet with parchment paper and set aside.
    Place desiccated coconut, coconut oil, protein powder, honey and vanilla extract into a food processor and process until mixture is well combined and creamy.
    Firmly press the coconut mixture into a medium cookie scoop then gently tap the mixture out on to the baking sheet, continue with the rest of the mixture.
    Or use your hands to create the balls. Makes around 10 balls, depending on your preferred size.
    Place the baking sheet filled with coconut balls into the freezer for 10 to 15 minutes or until hardened. 

Coconut Coating

  • Gently soften the coconut butter in a small saucepan over low heat, making sure not to burn it!
    Once softened, stir in water a tablespoon at a time until the coconut butter has thinned and easily drips from a spoon.  Remove from the heat and stir in honey and vanilla extract.
    Use a spoon to cover the frozen coconut balls in the coconut mixture holding each ball over the melted coconut butter spooning it over letting any excess drip back into the bowl.
    Put the covered snack balls back on the parchment lined baking sheet and sprinkle the top with extra desiccated coconut.
    Place the snack balls in the freezer once more for 30 minutes or until hardened. Remove 15minutes prior to serving and enjoy!
