Coconut Butter Protein Stuffed Dates
Ingredients
- 16-20 Medjool dates
- 1/2 cup coconut butter, store bought or healthy homemade recipe below in notes
- 1/4 cup protein or collagen peptides powder, vanilla or plain
- 2 tablespoons honey or maple syrup
Optional Chocolate Drizzle & Toppings
- 1/4 cup chocolate chips
- 1 teaspoon coconut oil
- Desiccated coconut
- Flaky salt
Instructions
- If you are going to make your own healthy coconut butter, do this first so its ready to go when you wish to fill the dates. Recipe link below in notes.Place the jar of coconut butter in a bowl of hot water to warm and soften. Or give a burst or two of 20 seconds in the microwave. (If you live in a hot climate you would not need to do this). Use a paring knife to cut the dates open lengthwise. Remove the pits.In a small mixing bowl, mix the (softened) coconut butter, protein powder, and honey. Use a spoon to stuff the dates with the coconut butter protein mixture. Fill each date with about 1/2 tablespoon of coconut butter.Transfer the dates to a parchment lined baking sheet.
Optional Chocolate Coating Or Drizzle
- Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Dip the filled dates halfway in the melted chocolate or drizzle it over with a spoon. Then, sprinkle them with flaky salt and more coconut if desired.Transfer the dates to the fridge and chill for at least one hour, or freeze for at least fifteen minutes before enjoying.Keep them in a container in the fridge for up to 2 weeks to grab whenever you need a quick snack/dessert!
