Ingredients

Base Layer

  • 3 tablespoons thick Greek-style yogurt
  • 1 tablespoon peanut (or any other nut or seed) butter
  • 1 scoop protein or collagen peptides powder, vanilla or chocolate
  • 1 teaspoon honey or maple syrup

Chocolate Topping

  • 2 tablespoons chocolate chips
  • 1/2 teaspoon coconut oil
  • 1 tablespoon chopped roasted peanuts

Instructions

  • In a small bowl, mix together the yogurt, protein powder, and honey until smooth.
    Shape the mixture into a thick cookie and place it on a small piece of parchment paper.
    Spread the peanut butter over the top and freeze for one hour.  

Chocolate Topping

  • Place chocolate chips and coconut oil in small dish and microwave with 15 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Drizzle or spread the melted chocolate on top of the peanut butter layer.
    Sprinkle the chopped peanuts on top chocolate and freeze another 10 minutes.
    Enjoy straight from the freezer for a creamy, chewy, snickers-inspired treat!
