Fro Yo Peanut Butter Protein Bars
Equipment
- 10 Popsicle sticks optional
Ingredients
- 2 cups thick Greek-style yogurt, plain or vanilla
- 1/2 cup peanut (or any other nut or seed) butter
- 1/4 cup protein or collagen peptides powder
- 2 tablespoons honey or maple syrup
- 1 teaspoons vanilla extract
Chocolate Topping
- 1 cup chocolate chips
- 1 tablespoons coconut oil
Toppings Optional
- 1/2 cup chopped nuts – peanuts, almonds, walnuts
- Fresh fruit
- Chocolate chips or shavings
Instructions
- In a mixing bowl, combine the yogurt, peanut butter, protein powder, honey and vanilla extract. Stir until smooth and well combined.Taste test and add more honey or vanilla if you think it needs it. Line an 7×5-inch loaf pan or a similar-sized pan with parchment paper, leaving some overhang for easy removal. Or use popsicle mold and insert popsicle sticks for easy eating.Pour the yogurt mixture into the prepared pan and spread it evenly with a spatula or back of a spoon. Next melt the chocolate topping.
Chocolate Topping
- Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Once melted, pour over the chocolate over the bars and spread out with a spatula or back of a spoon.Or if making them into popsicles, melt the chocolate in a tall glass or dish and simply hold the popsicle stick and dip the frozen popsicles in half way or all the way.If desired, sprinkle mini chocolate chips, chopped nuts, or fresh fruit on top of the chocolate while it is still wet, pressing them in gently.Place the pan in the freezer and freeze for at least 2-3 hours, or until the bars are firm. Remove bars from the pan using the parchment paper overhang. Cut into 10-12 bars or more smaller squares.Store in the freezer for up to 3 months. If frozen, let them sit at room temperature for a few minutes before serving.
