Birthday Cake Protein Bars that are healthy and SO delicious! Whether you are making these for a get-together or just craving a healthy treat, these yummy bars are great for any occasion. Every bite is full of sweet, creamy goodness!

Ingredients

  • 1/2 cup thick Greek-style yogurt, plain or unflavoured
  • 1/2 cup cashew (or any other nut or seed) butter
  • 1/2 cup oat flour (oats blended to a flour)
  • 1/2 cup protein or collagen peptides powder, unflavoured or vanilla
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract - optional
  • 3 tablespoons rainbow sprinkles

Chocolate Drizzle

  • 1/2 cup white chocolate chips
  • 2 teaspoons coconut oil

Instructions

  • Line a 9 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    In a mixing bowl or food processor combine yogurt, cashew butter, oat flour, protein powder, honey, coconut oil, vanilla and almond extract and mix until smooth and a thick dough forms. Gently fold in 2 tablespoons of rainbow sprinkles, being careful not to overmix.
    Press the dough into the lined pan using a spatula or back of a spoon to smooth the surface. Place the pan in the freezer to help it set while you melt the white chocolate drizzle.

Chocolate Drizzle

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Lift the bars out of the pan using the parchment paper handles and cut into 6-8 bars or more smaller squares..
    Drizzle the melted white chocolate over the chilled bars and immediately sprinkle with additional rainbow sprinkles for extra color and crunch. Return the bars to the fridge for about 10-15 minutes until the topping is set.
    Store in fridge for up to 1 week or freezer for up to 3 months.
