Double Chocolate Fudge Protein Bites
Ingredients
- 1/2 cup cottage cheese, blended for a smooth texture
- 1/2 cup almond flour
- 1 scoop protein or collagen powder, chocolate or plain
- 3 tablespoons cocoa powder
- 2 tablespoons honey or maple syrup
- 2 tablespoons peanut (or any other nut or seed) butter
- 1/2 teaspoon vanilla extract
- 2 tablespoons chocolate chips
Chocolate Drizzle - Optional
- 1/2 cup chocolate chips
- 1 teaspoon coconut oil
Instructions
- In a bowl, mix the blended cottage cheese, almond flour, protein powder, cocoa powder, honey, peanut butter, and vanilla extract until a dough forms. Stir in chocolate chips. Roll the mixture into 12 bite-sized balls.
Chocolate Drizzle – Optional
- Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Once melted drizzle over the bites.Refrigerate for at least 30 minutes before serving. Store in the fridge for up to 1 week or up to 3 months in the freezer.
