Ingredients
1½ cups cashew milk (or coconut any other plant based milk)
3 tablespoons gelatin
1 tablespoon honey, maple syrup or sweetener of choice
2-3 tablespoons cacao or cocoa powder
½ teaspoon vanilla extract
Or optional change of flavour:
½ teaspoon peppermint extract
Instructions
Put ½ cup of the cashew milk in a bowl or large measuring cup. Sprinkle the gelatin over the milk. Set aside.
Heat the remaining cashew milk in a saucepan over medium heat, until warm.
Do not boil. Whisk in sweetener, cocoa powder and vanilla extract.
Remove from heat. Whisk in the gelatin mixture until dissolved.
Carefully pour into silicon molds (or dish or cake tin).
Place in the freezer for 15 – 30 minutes, until set.
