These coconut and date bars are one of my favorite treats to prepare. The coconut and dates in the recipe make for a tasty combination that will leave your sweet tooth pretty satisfied. The result? A fudgy, tasty treat that is perfect for when you are craving something sweet.

Made with 6 simple ingredients! They come together quickly, and you can enjoy them as a healthy breakfast, dessert, or energizing snack at any time of day! Almonds and coconut are bound together by dates and nut butter. Made with no refined sugar, these healthy no bake date bars are perfect for kids and adults!

I’ve always loved the combination of sweet dates and coconut. The almonds just add an extra crunchy texture to these delicious bars! SO GOOD!

I am going to skip the small talk here and get right to the point: these coconut date bars are AMAZING. And I highly suggest making them if you enjoy delicious treats that take MINUTES to make. I mean, who doesn’t?

So, I actually JUST made these bars and I tried them, semi freaked out because they were so good, ate a few more bites and now I am sitting down writing this blog post. I don’t mess around.

Often when we are busy we tend to snack more, rather than taking the time to prepare a more filling meal. But its important, even for adults, making sure your snacking is mindful is important. I’m all for the occasional indulgence, but snacking on something that is good for you and keeps you full will keep you from going back for handful after handful of potato chips or M&M’s.

These bars are the ticket. Many of us probably reach for Larabars or Kind bars as a healthy snack, myself included. This is a homemade version of them. Filled with dates, coconut and nuts and are naturally-sweetened.

Even though these are naturally sweetened, it makes you feel as though you are eating a candy bar. For those of you with a sweet tooth, you can definitely have more than one of these and still feel good about it! I already know that these will be a staple in our house for years to come; family gatherings, vacations, and hikes all require a healthy snack and these are our new go-to.

Dates: I love to use dates as a base in most of my snack balls and no-bake bars and treats, or if I need a natural sweetener in a cookie or frosting. They are little morsels of natural sugar and a great alternative to refined sugars. You don’t need many dates to make something sweet!

Its so awesome that you only need a small handful of ingredients and they take around five minutes to construct making them a really simple recipe to store in the freezer for a quick burst of energy. This recipe is a ‘healthified’ take on traditional sugar-loaded candy bars but made with wholesome ingredients.  As well as being a much healthier version its also much easier to make!

Coconut & Date Bars

Ingredients

  • 2 cups dates, soaked 30 minutes and drained
  • 1 cup desiccated coconut
  • 1/2 cup almonds or walnuts
  • 1/4 cup almond or peanut butter
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup extra shredded coconut for topping (optional)

Instructions

  • Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting. Or use a silicon rectangular bar mold.
    In a food processor, combine dates, desiccated coconut, almonds, almond butter, coconut oil and vanilla essence. Process until the mixture becomes sticky and well combined.
    Transfer the mixture into the pan or mold and spread it out evenly with a spatula or the back of a spoon.
    For extra texture, sprinkle the additional shredded coconut on top and gently press it down to adhere.
    Refrigerate for at least 2 hours to allow the bars to firm up. Once set, cut into 12 bars or more smaller squares and enjoy these naturally sweet, energy-boosting treats!
