These bars remind me of my superfood chocolate bars but with the added freshness of juicy fruit and no need to turn on the oven. I’ve been alternating them and protein frozen yogurt bars and they are just what I need!
These fudge bars will satisfy your sweet tooth too! They come together quickly and make the perfect snack. You only need a handful of ingredients and they take around five minutes to construct making them a really simple recipe to store in the freezer for a quick burst of energy.

Very Berry Chocolate Fudge Bars
Ingredients
- 1 ripe banana
- 1 cup fresh or frozen berries of choice – strawberries raspberries, blueberries or a mix
- 1/2 cup almonds, peanuts or cashews
- 1/4 cup desiccated coconut
- 1/4 cup peanut (or any nut or seed) butter
- 2 tablespoons honey or maple syrup
- 1 cup chocolate chips
- 2 tablespoons coconut oil
Instructions
- Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.In a medium bowl, add chocolate chips, coconut oil and honey. Melt in microwave in 30 second increments until melted, stirring in between. Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Place bananas, peanut butter and melted chocolate mixture in a food processor and process until smooth and creamy. Place berries, nuts and desiccated coconut into the bottom of the lined pan spreading them out evenly.Scoop out the banana, peanut butter, chocolate mixture from food processor and spread out on top of the berries and nuts.Tap loaf pan on the counter a few times to help everything to settle.Let set in the freezer for about 3-4 hours.Remove loaf pan from the freezer, then holding onto parchment flaps remove onto a cutting board and let thaw for 2-3minutes or until you can slice through.Cut into 8 bars or more smaller squares.
