Macadamia & Apricot Snack Balls
Ingredients
- 1 cup macadamia nuts, raw or toasted
- 3/4 cup nut butter -almond, peanut, cashew
- 1/2 cup dates, soaked 30 minutes and drained
- 1/2 cup rolled oats
- 1/2 cup chopped, dried apricots
- 1/2 cup chocolate chips
- 1 teaspoon vanilla extract
Instructions
- In a food processor, place the macadamia nuts, dates, rolled oats and apricots and process until broken down and the mixture starts to form a dough-like consistency.Add nut butter, chocolate chips and vanilla extract and pulse a few times to combine all the ingredients.Be careful not to over process as its nice to have texture variance and different sized “bits” in your snack balls.Roll the mixture into small balls, about 1 inch in diameter - makes around 20 balls depending on your preferred size. Will keep in the fridge for up to 1 week and the freezer for up to 3 months.
