Servings 7

Ingredients

  • 1 1/2 cups oat flour (rolled oats blended to a flour) or almond flour
  • 1/2 cup peanut (or any other nut) butter
  • 1/2 cup protein or collagen powder – vanilla or unflavoured
  • 1/4 cup almond (or any) milk
  • 1/4 cup honey or maple syrup
  • 1/2 cup chocolate chips
  • 1 teaspoon vanilla extract

Instructions

  • Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
In a medium bowl or using a standing mixer, add all ingredients (except chocolate chips) and mix with large spoon or spatula until a dough forms.
If dough is a little dry, add a little more almond milk until you get a soft dough. If dough seems too wet or very sticky, add a little oat flour until you get the right consistency (all protein powders are different so this is why the recipe is a little flexible).
Taste test and add more honey or vanilla extract if you think it needs it.
Feel free to mix a few tablespoons of chocolate chips into the batter if you would like. Transfer protein bar dough to the parchment lined pan. Using a spatula or back of a spoon spread dough out into an even layer.
Lightly press remaining chocolate chips into the top of the bars.
Place perfect bars in the freezer for 15-30 minutes until set. Transfer out of freezer, cut, and enjoy! Makes 7 large bars or more smaller squares.
Store in the fridge for up to 1 week or freezer for up to 3 months.
You can eat these bars straight out of the freezer or let them sit for 10 minutes for a softer texture.
