Optional - powdered sugar or substitute, for coating – allulose, coconut sugar, monk fruit, erythritol or stevia.
Instructions
In a medium sauce pan add water then sprinkle the gelatin powder evenly across the surface of the water.Let it sit undisturbed for 5–10 minutes, allowing it to bloom and absorb the water.Add honey, lime juice and smashed kiwi fruit to the saucepan with the bloomed gelatin.Over medium heat, stir until simmering.Remove from heat, allow to slightly cool then pour mixture into silicone molds or a baking dish lined with parchment paper. Use a spatula to smooth the surface if using a baking dish.Transfer the molds or dish to the refrigerator. Let set for at least 2 hours, or until firm to the touch.Gently pop the gummies out of the molds.If using a baking dish, slice the mixture into bite-sized pieces with a sharp knife.Coat in the powdered sugar/substitute if desired.Store in an airtight container in the fridge for up to 2 weeks.
