Ingredients
Base
1cupalmonds
1/2cupdesiccated coconut
1/2cupoats, instant or quick
1/2cupdates, soaked 30 minutes and drained
1/4cupcoconut oil, melted
Icing
1 1/2cupsdesiccated coconut
1/2cupcoconut oil, melted
1/4cuphoney or maple syrup
2-3lemons - juice and zest, depending on how lemon-ey you prefer
Instructions
Base
In a food processor, blend almonds until they are broken down and crumbly. Add coconut, oats, dates and coconut oil and continue to blend until the mixture is well combined and sticky. Press the dough into a baking paper-lined tin (8x8 inch), then place tin in the fridge while you make the icing.
Icing
In a food processor; blend the coconut until broken down into fine crumbs. Add melted coconut oil, honey, lemon juice and zest and process until smooth. Pour the icing over the base and return to the fridge. Allow 2–3 hours to set, then slice into 12 squares. Store in the fridge.
