White Chocolate Caramel Swirl Fudge

A super simple caramel fudge recipe that's rich and creamy. An exceptional sweet snack perfect for any time of year. With caramel swirls throughout! It is an amazing no fail fudge recipe that is sure to impress!

Ingredients

  • 3 cups white chocolate chips
  • 1 1/2 cups condensed milk - store bought or homemade sugar free recipe below in notes. Note: You will need to double the homemade recipe to get 1½ cups for the full fudge recipe.
  • 1 cup nuts - cashews, macadamias, or pecans, chopped
  • 1/2 cup caramel sauce – store bought or homemade sugar free recipe below in notes.
  • 1 teaspoon vanilla extract

Instructions

  • If you are going to make your own sugar free homemade condensed milk and caramel sauce, make this first and store in fridge so its ready when you go to make the fudge.
    Line an 8 x 8-inch baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the fudge out easier for cutting.
    Melt the ingredients. In a microwave-safe bowl, combine your chocolate chips and condensed milk. Microwave at 50% power in 30-second spurts stirring in between bursts until the chocolate begins to melt.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the condensed milk and chocolate chips together.
    Stir frequently, until the chocolate has melted and the mixture is completely smooth, takes up to 10 minutes.
    Stir in the vanilla extract and pour the mixture into the lined baking pan and smooth out with a spatula or back of a spoon.

Caramel Swirl

  • The caramel swirl is what makes this fudge really special. After scooping the  fudge mixture into the lined pan, drizzle the room temperature caramel sauce over the top.
    Use a knife or spatula to make swirls in the fudge ,but be careful not to mix too much. This will create pretty caramel ribbons throughout the fudge.
    Chill the fudge until set.
    Once ready, slice into 1-inch squares.
    To store: These fudgy squares should be stored in the refrigerator, covered and will keep well for up to 4 weeks.
    To freeze: Place leftovers in a zip lock bag and store it in the freezer for up to 6 months.
