Place all the ingredients in a blender and blend until smooth. Pour into a separate jug and set aside in the fridge.
To Assemble
Fill each mold half-way with the vanilla smoothie. Freeze this layer for about 30 min – 1 hour (just to partially freeze the layer. This will ensure that the chocolate layer won't sink and mix with the vanilla layer).Pour the chocolate smoothie layer over the semi-frozen vanilla smoothie layer. Using a skewer or extra popsicle stick, gently swirl the two layers.Insert the popsicle sticks, and freeze for at least 6 hours to completely freeze the popsicles.Dip the popsicle molds in hot water for a few seconds (or under running hot water), to make it easier to un-mold them. Place the un-molded popsicles in zipper bags and in the freezer for whenever you need a delicious and healthy snack!
