Ingredients
1cupalmond flour (almonds blended to a flour)
1/2cupcream cheese (softened)
1/2cupstrawberries, mashed
1/4cupprotein or collagen powder
2tablespoonshoney or maple syrup
1tablespoonfreeze dried strawberries
1/2teaspoonstrawberry extract (optional)
Toppings Optional
Sprinkle of freeze dried strawberries
Desiccated coconut
Instructions
In a mixing bowl, combine almond flour, softened cream cheese and protein powder.Note: To soften cream cheese, microwave it in short bursts, or leave it out on the counter at room temperature for a longer period, or submerge the unopened package in a bowl of warm water for a few minutes.Add mashed strawberries, honey, freeze dried strawberries, vanilla extract and strawberry extract if using then mix until a dough forms.Roll the mixture into 12 (more or less) balls around 2 tablespoons each.Place in the refrigerator for at least 30 minutes to firm up.Enjoy chilled for a delicious and protein-packed snack! Will keep in the fridge for up to 1 week or freezer for up to 3 months.
