Strawberry Cheesecake Protein Snack Balls
Ingredients
- 1 cup almond flour (almonds blended to a flour)
- 1/2 cup cream cheese (softened)
- 1/2 cup strawberries, mashed
- 1/4 cup protein or collagen powder
- 2 tablespoons honey or maple syrup
- 1 tablespoon freeze dried strawberries
- 1/2 teaspoon strawberry extract (optional)
Toppings Optional
- Sprinkle of freeze dried strawberries
- Desiccated coconut
Instructions
- In a mixing bowl, combine almond flour, softened cream cheese and protein powder.Note: To soften cream cheese, microwave it in short bursts, or leave it out on the counter at room temperature for a longer period, or submerge the unopened package in a bowl of warm water for a few minutes.Add mashed strawberries, honey, freeze dried strawberries, vanilla extract and strawberry extract if using then mix until a dough forms.Roll the mixture into 12 (more or less) balls around 2 tablespoons each.Place in the refrigerator for at least 30 minutes to firm up.Enjoy chilled for a delicious and protein-packed snack! Will keep in the fridge for up to 1 week or freezer for up to 3 months.
