Ingredients
Bar Base
1cuprolled oats
1/2cupcashews, soaked 3+ hours and drained
1/2cupcashew or almond butter
1/2cupdesiccated coconut
1scoopvanilla protein powder
1/4cupfreeze-dried strawberries
2-3tablespoonsmaple syrup or honey
1teaspoonvanilla extract
2-4tablespoonscoconut milk (if needed for blending)
Strawberry Drizzle
1tablespoonfreeze-dried strawberries
2tablespoonscoconut oil
2-4tablespoonsmaple syrup or honey (to taste)
Instructions
Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.In a food processor, blend oats and cashews until slightly broken down.Add nut butter, coconut, protein powder, shredded coconut, maple syrup, vanilla and coconut milk if needed. Blend until a thick dough forms.Lastly add freeze-dried strawberries and pulse a couple of times to combine but still leave chunks for pops of colour and flavour.Press mixture into the lined tin. Place in the fridge to set while preparing the drizzle.
Strawberry Drizzle
Crush the dried strawberries with a mortar and pestle. Add in the coconut oil and maple syrup. Stir until everything is combined and drizzle it over the barsRefrigerate for at least 2 hours or freeze for 45–60 minutes until firm.Slice into 8-10 bars or more smaller squares.Store in an airtight container in the fridge for up to 1 week or freezer for up to 3 months. These bars are especially delicious slightly chilled for that coconutty texture.
