Ingredients

  • 1 cup soft dates, (if hard, soak 30 minutes and drain)
  • 1 cup almond flour
  • 3/4 cup desiccated coconut
  • 1/2 cup freeze-dried raspberries
  • 1 scoop vanilla protein powder
  • 1 tablespoon coconut oil (optional, for richness)
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Optional Coatings

  • Extra shredded coconut
  • Crushed freeze-dried raspberries
  • Drizzle of melted chocolate

Instructions

  • Add freeze-dried raspberries to a food processor and pulse into small pieces or powder.
    Add dates, almond flour, shredded coconut, protein powder, coconut oil (if using), vanilla, and salt.
    Blend until the mixture becomes sticky and holds together when pressed.
    Roll into 12-14 bite-sized balls using your hands.
    Roll in extra coconut or crushed raspberries if desired.
    Chill in the fridge for 20–30 minutes to firm up.
    Store in an airtight container in the fridge for up to 1 week or freeze for up to 1 month.
