Ingredients

Almond Protein Base

  • 1 cup almond flour
  • 1/2 cup vanilla protein powder
  • 1/4 cup nut butter
  • 3 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons milk of choice, as needed
  • Pinch of sea salt

Nut Butter Caramel

  • 1/2 cup natural peanut butter, almond butter, or cashew butter
  • 1/4 cup maple syrup
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Chocolate Topping

  • 3/4 cup chocolate chips or chopped dark chocolate
  • 2 teaspoons coconut oil

Instructions

  • Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
Add the almond flour, protein powder, nut butter, maple syrup, vanilla and sea salt to a bowl. Mix until a soft dough forms. Add milk, one tablespoon at a time, if the mixture seems too dry.
Press the mixture firmly and evenly into the prepared pan. Use the back of a spoon or your fingers to smooth it out.

Nut Butter Caramel

  • Combine the nut butter, maple syrup, melted coconut oil, vanilla and sea salt in a small bowl. Stir until smooth and creamy.
Spread the nut butter caramel evenly over the base.

Chocolate Topping

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
Pour the melted chocolate over the caramel layer and spread into an even coating.
Refrigerate for 1–2 hours, or until completely firm.
Remove from the pan, then slice into 8 bars or more smaller squares with a sharp knife.
Store your Protein Twix Bars in an airtight container in the refrigerator for up to 7 days. They can also be frozen for up to 2 months. Allow frozen bars to thaw for several minutes before serving.
