Pink Princess Bounty Protein Balls

These healthy, high-protein Bounty inspired snack balls are an easy, no-bake, protein-rich treat. Packed with creamy coconut and rich dark chocolate, they take just 15 minutes to prep and offer the perfect post-workout refuel or 3 PM sweet craving fix.

Ingredients

  • 2 cups desiccated coconut
  • 1 cup coconut butter, store bought or recipe below in notes
  • 1/4 cup honey or maple syrup
  • 2 teaspoons vanilla extract
  • 1/4-1/2 teaspoon beet juice (see recipe note below) - or few drops natural red or pink food colouring

Chocolate Coating

  • 1 cup chocolate chips
  • 1 tablespoon coconut oil

Instructions

  • Add desiccated coconut, coconut butter, honey, vanilla and beet juice to a food processor and process until everything is well combined and the mixture starts to stick together. It should be sticky when pressed between your fingers.
    Roll the dough into 10-12 balls or bars (or more smaller squares) if preferred shaping them with your hands. Place them on a tray lined with parchment paper and freeze for 1 or more hours, or until firm.

Chocolate Coating

  • Place chocolate chips and coconut oil in small dish and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Dip the chilled balls or bars one at a time in the melted chocolate using a spoon and/or a fork, carefully moving around to ensure each is fully coated.  Once covered lift them out onto a tray lined with parchment.
    If desired, you can dip them in a second coat of chocolate or drizzle with any leftover melted chocolate. Place them in the freezer to set for 5-10 minutes.
    Storage: Place them in an airtight container and refrigerate them for up to a week. To freeze, just pop them in an airtight container and they will be good for up to 4 weeks. 

Natural Beetroot Food Dye

  • To make beet food dye, simply wash a beet and grate it. Protect your counter surface with towels, or grate on a plate or use a food processor.
    Once your beet is grated, gently squeeze the beet juice into whatever you wish to dye a few drops at a time until the required colour is reached. A single beet should yield about 3 tablespoons of juice.
