Pineapple & Cherry Coconut Protein Fudge

Healthier pineapple and cherry protein fudge. Indulgent and delicious. If you are looking for something sweet, but healthy, this is the perfect recipe. It tastes great and is a good way of getting extra nutrients into your diet while satisfying your sweet tooth.

Ingredients

  • 1 cup white chocolate chips
  • 1 cup condensed milk –store bought or homemade sugar free recipe below in notes
  • 1/2 cup pineapple pieces, drained and cut into small cubes or chopped dried pineapple
  • 1/2 cup maraschino cherries, chopped
  • 1/4 cup protein or collagen peptides powder
  • 1/2 teaspoon vanilla extract

Instructions

  • If you are going to make your own homemade sugar free condensed milk do this first so its ready and waiting when you go to make this fudge.
    Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    In a medium saucepan over low heat, gently melt the white chocolate chips, and condensed milk. Stir frequently until smooth and creamy.
    Gently fold in the pineapple, cherries, protein powder and vanilla extract and mix until the mixture is smooth and well-combined.
    Pour the fudge mixture into the prepared baking dish, spreading it out evenly.
    Refrigerate the fudge for at least 1 hour or until it is firm and set.
    Once the fudge has set, remove it from the pan using the parchment paper and cut it into 20 (more or less) small squares.
    Store in fridge for up to 1 week or freezer for up to 3 months.
