113.5 ozcoconut cream, full fat (solid part only) *see note below
1/2cupchocolate protein powder
1/4cupchocolate hazelnut spread (Nutella) (or homemade recipe below in notes)
1-2tablespoonsmaple syrup or honey to taste (optional, depending on sweetness of protein powder)
1teaspoonvanilla extract
Pinch of sea salt
Optional Mix-Ins
1/4cupchopped roasted hazelnuts
1/4cupdark chocolate chips
Extra chocolate spread swirled through before freezing
Optional Toppings
Chopped roasted hazelnuts
Dark chocolate shavings
Fresh strawberries
Sliced banana
Chocolate drizzle
Sprinkles
Instructions
Note: Place the can of coconut cream or milk in the fridge or freezer for at least 1-2 hours before making these bars to allow coconut cream to separate.Open chilled can and scoop out the cream that has separated and set hard on the top into a blender or food processor. Save the remaining coconut water to use in a smoothie, drink, or discard.Add the chocolate hazelnut spread, protein powder, cocoa powder, maple syrup (if using), vanilla and sea salt.Blend until completely smooth and creamy.Fold through any optional mix-ins.Transfer to a freezer-safe container.Swirl through extra chocolate spread if desired.Freeze for 3–4 hours until scoopable. If frozen solid, allow the nice cream to sit at room temperature for 10–15 minutes before serving.Scoop into bowls and top with your favourite toppings.Store in an airtight freezer-safe container for up to 2 months.For the creamiest texture, let it soften slightly before scooping.
