Ingredients
Chocolate Layer
1cupmilk or dark chocolate chips
1/2cupcondensed milk – store bought or healthy sugar free homemade recipe see below in notes
1tablespooncoconut oil
1teaspoonvanilla extract
Mint Layer
1cupwhite chocolate chips
1/2cupcondensed milk – store bought or healthy sugar free homemade recipe see below in notes
1tablespooncoconut oil
1teaspoonmint extract
Few drops green food colouring or make your own natural green dye - cook tender, greens (such as spinach) about a minute, squeeze out water. Puree with a tiny bit of water to liquefy. You will get a very concentrated green.
Instructions
Chocolate Layer
If you are making your own sugar free condensed milk, make it first so its ready to use when you make this fudge. See recipe below in notes.Line an 8 x 8” baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the candy out easier for cutting. Or use a silicon candy mould or baking dish.Place the chocolate chips, condensed milk and coconut oil to a microwave-safe bowl and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips, condensed milk and coconut oil together.Once melted, stir in the vanilla extract. Set aside 1⁄4 cup of the mixture.Pour the rest into the prepared baking dish and smooth into an even layer.
Mint Layer
Place the white chips, condensed milk, and coconut oil to a microwave-safe bowl and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips, condensed milk and coconut oil together.Add the mint extract and a few drops of green food colouring and mix until combined.Pour over the chocolate layer. Add the remaining chocolate mixture on top. Swirl with a knife mixing the two colours together in a haphazard manner.Cover with plastic wrap and place in the refrigerator to set for at least 2 hours.Lift the fudge from the baking dish by pulling up on the parchment paper. Cut into bite size squares.Store in fridge for up to 2 weeks or in freezer for 6 months.
