Mint Chocolate Swirl Protein Fudge

Velvety, smooth, bright and zesty healthy fudge that looks a picture of yum! Seriously minty...this recipe makes it easy to create homemade candy with swirls of chocolate and mint with no candy thermometer needed! Its the perfect treat if you love coconut like I do.  I’m obsessed with coconuts, they are my favorite ingredient in desserts and healthy snacks.

Ingredients

Chocolate Layer

  • 1 cup chocolate chips
  • 1/2 cup condensed milk, for a healthy sugar free homemade recipe see below in notes
  • 2 scoops vanilla or chocolate protein powder
  • 1 tablespoon coconut oil
  • 1 teaspoon vanilla extract

Mint Layer

  • 1 cup white chocolate chips
  • 1/2 cup condensed milk, for a healthy sugar free homemade recipe see below in notes
  • 1 tablespoon coconut oil
  • 1/2 -1 teaspoon mint extract
  • Few drops green food colouring or if you wish to make your own natural green food colouring - cook tender, greens (such as spinach) in a tiny bit of water for about a minute then drain. Puree the greens with just enough water to liquefy them, you will get a very concentrated green. 

Instructions

Chocolate Layer

  • Line an 8 x 8” baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the candy out easier for cutting. Or use a silicon candy mould or baking dish.
    Place chocolate chips, condensed milk and coconut oil to a microwave-safe bowl and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips, condensed milk and coconut oil together.
    Stir in the protein powder and vanilla extract. Pour into the prepared baking dish and smooth into an even layer.
    Place in the refrigerator while you prepare the mint layer.

Mint Layer

  • Place chocolate chips, condensed milk, and coconut oil to a microwave-safe bowl and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips, condensed milk and coconut oil together.
    Add the mint extract and a few drops of green food colouring and mix until combined.
    Add dollops of the mint mixture on top of the chocolate layer. Swirl with a knife mixing the two colours together in a haphazard manner.
    Cover with plastic wrap and place in the refrigerator to set for at least 2 hours.
    Lift the fudge from the baking dish by pulling up on the parchment paper. Cut into bite size squares.
    Store in fridge for up to 2 weeks or in freezer for 6 months.

Notes

There are some recipes that are just better with condensed milk (think fudge and ice cream!)
This is a super simple recipe that creates a delicious sugar free condensed milk, perfect for eating straight out the jar or in your favourite recipes!
