Ingredients

  • 2 cups pecan butter – store bought or homemade sugar free recipe below in notes
  • 1/2 cup coconut oil
  • 1/4 cup maple syrup

Instructions

  • Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    In a microwave-safe bowl with 20 second bursts stirring in between or using the stovetop, gently melt the pecan butter together with the coconut oil. Once melted, stir in the maple syrup and mix thoroughly until everything is well combined.
    Pour the fudge mixture into the prepared pan and place it in the refrigerator for at least one hour, or until it becomes firm.
    After the fudge has set, take a sharp knife and cut it into 16 or more bite-sized pieces for serving.

Homemade Pecan Butter
2 cups pecans
1/4 teaspoon sea salt
Pinch of ground cinnamon
Preheat your oven to 350°F and spread the pecans on a baking sheet. Bake until lightly golden brown with a nutty smell, about 5 to 10 minutes.
Transfer the pecans to a food processor along with the salt and cinnamon, and blend on the fastest setting until smooth and creamy, about 3 to 5 minutes.
Transfer to an airtight container and store at room temperature.
