Ingredients
1cupcashews
1cupdesiccated coconut + extra for rolling balls in
1/2cupcoconut flour
2tablespoonshoney or maple syrup
2lemonsjuice and zest
1/4cupprotein or collagen peptides powder, vanilla or plain
1/2teaspoonvanilla extract
Instructions
Add all ingredients to a food processor.Process until mostly smooth. Taste and adjust if desired by adding more honey, lemon or vanilla if you think it needs it. If it seems too thick, you can thin it out slightly with 1-2 teaspoons of any milk.Scoop out 2 tablespoon lots of dough and roll into about 12 (more or less) balls of your preferred size. Roll in desiccated coconut if desired.This recipe can be stored in the fridge for 1-2 weeks, or in the freezer for up to 3 months.
