Ingredients

Oat Base Crust

  • 1/4 cup rolled oats
  • 1 teaspoon honey or maple syrup
  • 1 teaspoon coconut oil, melted
  • A little milk (only if necessary)

Cheesecake

  • 1/3 cup cream cheese
  • 1/3 cup thick Greek-style yogurt
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon vanilla extract, if using plain unflavoured yogurt

Instructions

  • Line a small cheesecake mold or small dish with parchment paper or use a silicon mold.

Oat Base Crust

  • In a small bowl, combine together oats, honey and coconut oil. Mix well, until you get a doughy texture – only if the mixture is too thick, adjust with a small amount of milk, a teaspoon at a time until it starts to come together. Press the oatmeal mixture into the bottom of the prepared cheesecake mold.

Cheesecake

  • In a small bowl, whisk together cream cheese, Greek yogurt, honey and vanilla until smooth and creamy.
    Transfer the mixture into the cheesecake mold, on top of the oat crust.
    Refrigerate for at least 30 minutes or overnight before serving.
