Ingredients
Oat Base Crust
1/4cuprolled oats
1teaspoonhoney or maple syrup
1teaspooncoconut oil, melted
A little milk (only if necessary)
Cheesecake
1/3cupcream cheese
1/3cupthick Greek-style yogurt
1tablespoonhoney or maple syrup
1/2teaspoonvanilla extract, if using plain unflavoured yogurt
Instructions
Line a small cheesecake mold or small dish with parchment paper or use a silicon mold.
Oat Base Crust
In a small bowl, combine together oats, honey and coconut oil. Mix well, until you get a doughy texture – only if the mixture is too thick, adjust with a small amount of milk, a teaspoon at a time until it starts to come together. Press the oatmeal mixture into the bottom of the prepared cheesecake mold.
Cheesecake
In a small bowl, whisk together cream cheese, Greek yogurt, honey and vanilla until smooth and creamy.Transfer the mixture into the cheesecake mold, on top of the oat crust.Refrigerate for at least 30 minutes or overnight before serving.
