Green Energy Bars

Energy bars are a very convenient, efficient way to enjoy a snack that will give you a shot of energy when you need it most!
With so much goodness crammed into such a small package, these homemade energy bars positively glow with green energy and great taste! Perfect for those on the go and looking for a quick, nutritious, clean-energizing treat!
Loaded with protein, fiber, antioxidants and complex carbohydrates they offer a great way to get in some extra veggies and keep you fueled throughout your day.
Make them as bars, or keep them bite sized to give your taste buds a treat and your body a boost of energy!

Ingredients

  • 1 cup cashews or almonds
  • 1 cup dates, soaked at least 30 minutes and drained
  • 1/2 cup desiccated coconut
  • 1/2 cup hemp hearts (seeds)
  • 1/4 cup coconut oil, melted
  • 1 tablespoon greens powder or
  • 1 cup green leaves such as kale, Swiss chard or spinach

Instructions

  • Mix the almonds‚ dates, coconut, coconut oil, greens powder or green leaves together in a food processor just until a rough dough has formed (allow some almonds to remain coarsely chopped for texture).
    Add the hemp seeds and pulse several times until combined.
    Place a sheet of parchment paper on a cutting board and spill the dough out on top. Use your hands to press and form into a one-inch thick rectangle‚ then cut into 8 bars or 16 smaller pieces.
    Wrap and keep in the freezer for long-term storage.
