Crunch Base
1/2cuprolled oats
1/4cupfinely chopped almonds, cashews or pecans
2tablespoonsnatural almond or cashew butter
1tablespoonmaple syrup or honey
Pinch of sea salt
Protein Yogurt Layer
1cupthick Greek yogurt
1scoopvanilla protein powder
1tablespoonmaple syrup or honey, optional
1/2teaspoonvanilla extract
Berry Layer
3/4cupfresh strawberries, blueberries or mixed berries
1tablespoonfinely chopped berries for the yogurt mixture
Optional Toppings
Extra fresh berries
Coconut flakes

Instructions
Line a 12-cup muffin pan with paper liners or use silicone muffin molds.Combine the oats, chopped nuts, nut butter, maple syrup and sea salt in a bowl. Mix until the ingredients are evenly coated and a crumbly mixture forms.Spoon approximately 1 tablespoon of the mixture into the bottom of each mold and press down firmly.In a separate bowl, combine the Greek yogurt, protein powder, vanilla and maple syrup if using. Stir until smooth and creamy.Fold the chopped berries into the yogurt mixture.Spoon the protein yogurt mixture evenly over the crunchy base.Press a few whole or sliced berries into the top of each bite.Sprinkle with coconut, hemp seeds or extra granola if desired.Place the tray in the freezer for approximately 2–4 hours or until the bites are firm.Remove from the molds and allow to sit at room temperature for 5–10 minutes before eating.Notes:Use full-fat or 5% Greek yogurt for the creamiest texture.If using a very thick protein powder, add 1–2 tablespoons of milk to the yogurt mixture.For a chocolate version, add 1 tablespoon cocoa powder to the yogurt layer.Store in an airtight freezer container for up to 2 months.Let the bites soften slightly before serving for the best creamy texture.
