Ingredients

  • 1 ripe banana
  • 1 cup Greek yogurt or thick natural yogurt
  • 1 cup cottage cheese
  • 1/2 cup vanilla protein powder
  • 1 teaspoon vanilla extract
  • 1 cup strawberries, sliced
  • 3/4 cup blueberries
  • 1 tablespoon honey or maple syrup, optional

Topping

  • 1/2 cup desiccated coconut

Optional Toppings

  • Chopped nuts
  • Freeze dried strawberries or blueberries
  • Hemp or chia seeds
  • Cacao nibs
  • Dark chocolate chips

Instructions

  • Line a baking tray with baking paper.
    Add the banana, yogurt, cottage cheese, protein powder and vanilla to a blender or food processor.
    Blend until completely smooth and creamy.
    Taste and add a little honey or maple syrup if you prefer a sweeter bark.
    Pour the mixture onto the prepared tray and spread into an even layer, approximately 1/2 inch thick.
    Scatter the sliced strawberries and blueberries evenly over the surface, gently pressing them into the mixture.
    The desiccated coconut goes on top for the white and a little texture. Keep it raw so it stays white, since toasting it browns the whole effect.
    Add any optional toppings.
    Place in the freezer for 3–4 hours, or until completely firm.
    Remove from the freezer and allow to sit for 3–5 minutes before breaking or cutting into pieces.
    Store the bark in an airtight freezer-safe container.
    Keep frozen for up to 1 month for the best flavour and texture.
