Coconut Candy Cream Protein Bites

Coconut candy bites are a delicious allergy friendly treat that will satisfy your sweet tooth! A chewy protein-rich coconut center is surrounded by a chocolate shell, making a sweet treat that you are sure to love.

Ingredients

  • 2 cups desiccated coconut
  • 1 cup condensed milk, store bought or sugar-free recipe below in notes
  • 1/2 cup chopped nuts
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons coconut oil, melted
  • 2 scoops protein or collagen peptides powder
  • 1 teaspoon vanilla extract

Chocolate Coating

  • 1 cup chocolate chips
  • 1 teaspoon vanilla extract

Instructions

  • In a medium mixing bowl, combine all ingredients and mix well.
    Roll the mixture into 14 (more or less depending on preferred size) balls and place them on a parchment-lined baking sheet. Freeze the balls for about 30 minutes to set.

Chocolate Coating

  • Place chocolate chips and coconut oil in small dish and microwave with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once melted, skewer each bite with a toothpick or fork and dip into the melted chocolate, then place back on the parchment lined tray.
    Or hold each one with a fork over the melted chocolate and spoon it over letting the excess drip back into the bowl.
    Drizzle any excess chocolate over the bites.
    Put the bites into the freezer for 10 minutes to set chocolate.
    Store in fridge for up to 1 week or freezer for up to 3 months.
