Course Dessert, Snack
Ingredients
Base Crust
2cupswalnuts, almonds, pecans or a mix
1cupdates, soaked at least 30 minutes and drained
1/4cupcocoa or cacao powder
Chocolate Filling
113.5ozcan coconut milk or cream full fat
1 1/2cupschocolate chips
Topping
Whipped Coconut Cream (recipe link in notes below)
Instructions
Base Crust
Line an 8 x 8” baking pan or pie dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the pie out easier for cutting.Place the walnuts in a food processor and process until broken down and crumbly. Add the dates and continue to process until well combined and mixture is sticky and holds together. Be careful not to over process as its nice to have different sized ‘bits’ to add texture to your base crust.Transfer the mixture to your prepared pie or tart pan and press down firmly to evenly distribute the dough. Set aside while you make the filling.
Chocolate Filling
Heat the coconut milk or cream until barely boiling. Turn off heat completely, and stir in the chocolate chips until they melt. Pour filling into the base crust. Either freeze a few hours until firm enough to cut or refrigerate overnight (if it's still too soft to cut clean slices, freeze a half hour to get it firmer). Refrigerate or freeze leftovers.
