Chocolate Tahini Date Protein Bites

Ingredients

Date Nut Protein Base

  • 2 cups soft dates, if dry, soak 30 minutes and drain
  • 1/2 cup nuts of choice (cashews, almonds or walnuts)
  • 1/2 cup vanilla or chocolate protein powder
  • 1/4 cup tahini (sesame seed butter)
  • 2 tablespoons cocoa powder
  • 2 tablespoons coconut oil
  • 1/2 teaspoon vanilla extract
  • Pinch sea salt
  • 1/2 cup sesame seeds to roll logs in

Chocolate Strip

  • 1/2 cup dark chocolate chips
  • 1 teaspoon coconut oil

Tahini Swirl

  • 1 tablespoon tahini for swirl on top of melted chocolate

Instructions

Date Nut Protein Base

  • Add dates, tahini, protein powder, cocoa powder, coconut oil, vanilla, and salt to a food processor. Blend until a thick, sticky dough forms.
    If the mixture feels dry, add 1–2 teaspoons of water or milk until it comes together smoothly.
    Lastly add nuts and pulse a few times to break up the nuts but still leave chunky bits for added crunch.
    Divide the mixture into 2 equal parts and roll each into a thick, long log. Roll in sesame seeds to coat.
    Use a metal straw, or the bottom of a teaspoon (or anything else you have that's metal, long and cylindrical) to press down the middle of each log to create a well for the melted chocolate.

Chocolate Strip Up The Middle Of The Log

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once melted, carefully pour into the well you have created up the middle of each log. Top with an optional drizzle of tahini, then run a sharp knife/cocktail stick down the middle to create a swirl affect.
    Refrigerate until the chocolate is set, then slice each log into 10 (more or less) slices.
    Store in the fridge forup to 1 week or freezer for up to 3 months.
    Best enjoyed slightly chilled for a fudgy texture.
