Ingredients
1cipthick Greek yogurt
1/2cupnatural creamy peanut butter
1/4cupvanilla or chocolate protein powder
1/2cupcoconut (or any other) milk
1-2tablespoonssyrup or honey
1teaspoonvanilla extract
Pinch sea salt
Chocolate Swirl
1/2cupdark chocolate chips or chopped dark chocolate
1teaspooncoconut oil
Optional Toppings
2tablespoonschopped peanuts
Cacao nibs
Shredded coconut
Mini chocolate chips
Flaky sea salt
Instructions
Line a baking sheet or small tray with parchment paper.In a small bowl, mix the peanut butter, protein powder, maple syrup, vanilla, and sea salt.Add milk a teaspoon at a time until the mixture becomes smooth and spreadable.Scoop out into the lined pan and smooth out.
Chocolate Swirl
Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Spoon small dollops of the melted chocolate over the peanut butter layer.Use the tip of a knife or spatula to gently swirl it through creating the swirl effect.Sprinkle with chopped peanuts, cacao nibs, coconut or your favorite toppings.Freeze for 30–60 minutes, or until completely firm.Break or cut into10 (or more or less) pieces.Store the bark in an airtight container in the freezer for up to 2 months. It can also be stored in the refrigerator for up to 1 week, although the texture will be softer.
