Chocolate Orange Protein Bars

Ingredients

Bar Base

  • 1 1/2 cups rolled oats
  • 1 cup raw almonds or cashews
  • 1 scoop vanilla (or chocolate) protein powder
  • 1/2 cup natural almond or cashew butter
  • 1/2 cup desiccated coconut
  • 1/3 cup honey or maple syrup
  • 2 tablespoons fresh orange juice
  • 2 teaspoons finely grated orange zest
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Chocolate Topping

  • 1 cup dark chocolate chips
  • 1 tablespoon coconut oil

Optional Toppings

  • Extra orange zest
  • Chopped pistachios
  • Cacao nibs
  • Flaky sea salt
  • Shredded coconut

Instructions

  • Line an 8-inch square baking pan with baking paper.
    Add the oats and nuts to a food processor and pulse until finely chopped.
    Add the protein powder, coconut and sea salt and pulse to combine.
    Add the nut butter, honey, orange juice, orange zest and vanilla. Process until a sticky dough forms.
    Press the mixture firmly into the prepared pan.

Chocolate Topping

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Spread the melted chocolate evenly over the base.
    Sprinkle with extra orange zest, flaky sea salt, chopped pistachios or your favourite topping.
    Refrigerate for 1–2 hours until completely set.
    Slice into 16 bars and store chilled.
    Store in the fridge in an airtight container for up to 1 week or freeze for up to 3 months. Thaw for 5–10 minutes before serving.
