Ingredients
Bar Base
1 1/2cupsrolled oats
1cupraw almonds or cashews
1scoopvanilla (or chocolate) protein powder
1/2cupnatural almond or cashew butter
1/2cupdesiccated coconut
1/3cuphoney or maple syrup
2tablespoonsfresh orange juice
2teaspoonsfinely grated orange zest
1teaspoonvanilla extract
Pinch of sea salt
Chocolate Topping
1cupdark chocolate chips
1tablespooncoconut oil
Optional Toppings
Extra orange zest
Chopped pistachios
Cacao nibs
Flaky sea salt
Shredded coconut
Instructions
Line an 8-inch square baking pan with baking paper.Add the oats and nuts to a food processor and pulse until finely chopped.Add the protein powder, coconut and sea salt and pulse to combine.Add the nut butter, honey, orange juice, orange zest and vanilla. Process until a sticky dough forms.Press the mixture firmly into the prepared pan.
Chocolate Topping
Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Spread the melted chocolate evenly over the base.Sprinkle with extra orange zest, flaky sea salt, chopped pistachios or your favourite topping.Refrigerate for 1–2 hours until completely set.Slice into 16 bars and store chilled.Store in the fridge in an airtight container for up to 1 week or freeze for up to 3 months. Thaw for 5–10 minutes before serving.
