Chocolate Orange Brownie Protein Balls

Ingredients

  • 1 cup almond flour
  • 1/2 cup chocolate or vanilla protein powder
  • 1/2 cup natural nut butter- almond, cashew or peanut butter
  • 1/4 cup cocoa powder
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • Zest of 1 large orange
  • 1-2 tablespoons fresh orange juice, as needed
  • Pinch of sea salt

Optional Add-Ins

  • 1/4 cup mini dark chocolate chips
  • 1 tablespoon cacao nibs
  • Extra orange zest
  • Melted dark chocolate for coating or drizzling
  • Finely chopped almonds or shredded coconut for rolling

Instructions

  • Add the almond flour, protein powder, cocoa powder and salt to a mixing bowl. Stir to combine.
    Add the nut butter, maple syrup or honey, vanilla and orange zest.
    Mix well until the ingredients begin to form a soft dough.
    Add the orange juice, one tablespoon at a time, until the mixture is moist enough to hold together when pressed. Don't add too much - you want a soft, fudgy consistency rather than a wet mixture.
    If using, fold through the chocolate chips or cacao nibs.
    Refrigerate the mixture for about 20–30 minutes if it feels too soft to roll.
    Using your hands, scoop out approximately 1 tablespoon of mixture and roll into balls.
    Enjoy immediately, or refrigerate until firm.
    For an extra-special finish, dip, coat or drizzle with melted dark chocolate and sprinkle with a little fresh orange zest.
    Storage: Store in an airtight container in the refrigerator for up to 1 week. They can also be frozen for up to 2 months. Thaw for a few minutes before eating.
    Tip: Protein powders vary in how much liquid they absorb. If the mixture is too dry, add another teaspoon of orange juice or milk. If it is too sticky, add a little extra almond flour.
