Ingredients

  • 1 cup crispy rice cereal
  • 1 cup soft dates, (if hard, soak in warm water for 10 minutes and drain)
  • 1/2 cup chocolate protein powder
  • 2 tablespoons cocoa or cacao powder
  • 1/4 cup almond butter, peanut butter, or cashew butter
  • 1 tablespoon coconut oil, melted
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Optional Coating

  • Melted dark chocolate
  • Cocoa powder
  • Crushed nuts
  • Shredded coconut

Instructions

  • Add dates, protein powder, cocoa powder, nut butter, coconut oil, vanilla, and sea salt to a food processor.
    Blend until a thick, sticky dough forms.
    Transfer the mixture to a bowl and gently fold in the crispy rice cereal.
    Mix until evenly distributed.
    Scoop into 10-12 tablespoon-sized portions and roll into balls.
    Roll in chopped nuts, cocoa powder or drizzle with melted dark chocolate if desired.
    Place in the refrigerator for 20–30 minutes until firm.
    Store chilled and enjoy whenever you need a crunchy chocolate snack.
