Ingredients

Berry Yogurt LayerΒ

  • 1 cup Greek yogurt
  • 2-3 tablespoons vanilla protein powder
  • 1-2 teaspoons maple syrup or honey, optional
  • 1/2 teaspoon vanilla extract
  • 1 cup fresh berries, such as strawberries, blueberries or raspberries

Chocolate Coating

  • 3/4 cup dark or semi-sweet chocolate chips or chopped chocolate
  • 1 teaspoon coconut oil, optional, for smoother melting

Optional Toppings

  • Freeze-dried berries
  • Shredded coconut
  • Chopped nuts
  • Flaky sea salt

Instructions

  • Prepare the mold: Place a silicone donut mold on a flat tray or plate that will fit into your refrigerator or freezer.
In a bowl, mix the Greek yogurt, protein powder, vanilla and maple syrup or honey if using. Stir until smooth and creamy. If the mixture is very thick, add a small splash of milk to loosen it.
Arrange the fresh berries evenly around the donut cavities. Slice larger strawberries into smaller pieces so they fit easily.
Spoon the protein yogurt mixture over the berries, gently pressing it down to fill the cavities completely. Smooth the tops.
Place the mold inthe freezer for about 2–3 hours, or until the yogurt layer is firm.

Chocolate Coating

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
Remove the donuts from the freezer. Carefully spoon or pour the melted chocolate over each donut, covering the surface. Add any favorite toppings before the chocolate sets.
Return the donuts to the freezer for another 10–15 minutes, or until the chocolate has completely hardened.
Remove from the mold and let sit for a few minutes before serving for a softer texture.
    Blended Bites TipsπŸ’‘
Use silicone molds: They make removing the frozen donuts incredibly easy.
Don't overfill with berries: Leave enough room for the yogurt to surround the fruit.
Choose thick yogurt: Greek yogurt creates a lovely creamy texture and holds the shape well.
Adjust the sweetness: Depending on your protein powder and berries, you may not need any additional sweetener.
Store in the freezer: Keep the donuts in an airtight container for up to 2–3 weeks for best texture and flavour.
These are especially delicious straight from the freezer when the chocolate is crisp and the centre is cold and creamy.
