Chocolate Protein Base
1cupalmond flour
1scoopchocolate protein powder
2tablespoonscacao (or cocoa) powder
1/4cupalmond butter or cashew butter
2tablespoonsmaple syrup or honey
1-2tablespoonsmilk of choice
Pinch of sea salt
Coconut Butter Layer
1/2cupcoconut butter, softened
1tablespooncoconut oil, melted
1tablespoonmaple syrup or honey
1/2teaspoonvanilla extract
Optional Toppings
Toasted shredded coconut

Instructions
Line a 12-cavity muffin tin with paper liners. Or use a silicon muffin pan.In a bowl, mix almond flour, chocolate protein powder, cacao powder, and salt.Add almond butter, maple syrup, and milk. Stir until a thick dough forms.Press the mixture evenly into the bottom of each muffin cup.
Coconut Butter Layer
If your coconut butter is solid you can soften it so it mixes easier by placing the jar in some hot water for a few minutes or give it a couple of 10 second bursts in the microwave. In a separate bowl, combine coconut butter, coconut oil, maple syrup, and vanilla until smooth.Spoon the coconut mixture over the chocolate layer and smooth the tops.Add any optional toppings.Refrigerate for 1–2 hours or freeze for 30 minutes until firm.Remove from liners and enjoy.Store in an airtight container in the refrigerator for up to 1 week or freeze for up to 1 month.
