Ingredients
2cupcashews, soaked 3+ hours and drained
1/3cuphoney or maple syrup
1/2cupcoconut milk, full-fat
1teaspoonvanilla extract
Caramel Chocolate Layer
1/4cuptahini (or nut/seed butter of choice)
3/4cupdates, soaked 30 minutes and drained
1/4cupcoconut oil
1/2teaspoonvanilla extract
1-2tablespoonswater as needed
1cup cashews, roasted, chopped
4ozchocolate, melted
Instructions
Blend ice cream ingredients until very smooth.Pour into a loaf pan lined with parchment paper. Freeze.
Blend caramel ingredients, adding water one tablespoon at a time as needed (some chunks are okay).Spread on top of the ice cream layer. Top with chopped cashews. press in lightly.
Freeze overnight.Slice into bars, coat in melted chocolate, chill until set.
