Caramel Cashew Ice Cream Bars

Gooey date caramel, cashews, coconut, all bundled in chocolate. Think: snicker’s ice cream bar but healthy!
You will not find a tastier, more creamy treat than these Caramel Cashew ice cream bars. Made with real ingredients, super easy to make with just a handful of ingredients.
You can also customise them with whatever your heart desires for the perfect healthy treat.

Ingredients

  • 2 cup cashews, soaked 3+ hours and drained
  • 1/3 cup honey or maple syrup
  • 1/2 cup coconut milk, full-fat
  • 1 teaspoon vanilla extract

Caramel Chocolate Layer

  • 1/4 cup tahini (or nut/seed butter of choice)
  • 3/4 cup dates, soaked 30 minutes and drained
  • 1/4 cup coconut oil
  • 1/2 teaspoon vanilla extract
  • 1-2 tablespoons water as needed
  • 1 cup cashews, roasted, chopped
  • 4 oz chocolate, melted

Instructions

  • Blend ice cream ingredients until very smooth.
    Pour into a loaf pan lined with parchment paper. Freeze.
  • Blend caramel ingredients, adding water one tablespoon at a time as needed (some chunks are okay).
    Spread on top of the ice cream layer. Top with chopped cashews. press in lightly.
  • Freeze overnight.
    Slice into bars, coat in melted chocolate, chill until set.
