Ingredients
2cupscashews, soaked for 4 hours and drained
1cupcoconut butter, melted
1 1/2cupsblueberries, fresh or frozen
1 1/2 cupsmilk of choice
1-2tablespoonshoney or maple syrup
1tablespoonvanilla extract
2scoopsany protein powder (optional)
Instructions
line an 8x8" brownie pan with parchment paper both ways to make it easy to remove the fudge when firm.
Add all ingredients to a food processor and blend until mixture is smooth,
Scoop the mixture into the prepared pan and spread it out. Tap the pan on the counter a few times to help get rid of air bubbles. Cover the pan and refrigerate overnight. Slice into small squares to serve.
