Servings 1

Ingredients

  • 1/4 cup old fashioned oats
  • 1/3 cup thick Greek-style yogurt
  • 1/4 cup any milk
  • 1 scoop protein or collagen peptides powder
  • 2 tablespoons chia seeds
  • 2 teaspoons honey or maple syrup
  • 1/4 cup berries, chopped
  • 1/2 teaspoon vanilla extract

Toppings or Mix Ins

  • Fresh fruit or berries
  • Chopped nuts
  • Drizzle of nut butter
  • Granola

Chocolate Magic Shell Topping

  • 2 tablespoons white chocolate chips
  • 1 teaspoon coconut oil

Instructions

  • Add oats, chia seeds, yogurt, milk, protein powder, honey and vanilla into a blender and blend until smooth. Fold in the chopped berries to keep some of them whole and chunky.
If the mixture is too thin let it sit on the counter or in the fridge for 5-10 minutes until it sets just a little.
Pour into a mason jar or serving cup or dish and melt the chocolate for the magic chocolate shell topping.

Magic Chocolate Shell

  • Place chocolate chips and coconut oil in small dish and microwave with 10 second bursts stirring between each one until melted and smooth.
Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
Pour it over the slightly set oats, and tilt the glass or mason jar around to make sure that the white chocolate is covering the top of your oatmeal fully.
Lid your mason jar, or cover your serving cup with plastic wrap and chill in the fridge for a few hours or overnight. Top with extra berries or toppings of choice, and enjoy your delicious breakfast/snack.
