Ingredients
2largeripe bananas
1/4cupnatural peanut butter (or almond butter)
1scoopvanilla protein powder
1-2teaspoonsmaple syrup or honey (optional)
1teaspooncoconut oil (optional, for smoother filling)
Chocolate Drizzle
1/4cupdark chocolate chips
1teaspooncoconut oil
Optional Toppings
Crushed peanuts or almonds
Shredded coconut
Sea salt flakes
Instructions
Line a tray or plate with baking paper.Peel bananas and slice into 8 lengthwise halves. Arrange on the tray.In a small bowl, mix nut butter, protein powder, maple syrup (if using), and coconut oil until smooth.Spoon a layer of the protein mixture on top of each banana piece and spread evenly.Place the tray in the freezer for 30–45 minutes until firm.
Chocolate Drizzle
Place chocolate chips and coconut oil in small dish and microwave with 15 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Once melted, spoon or drizzle melted chocolate over each piece, covering the top.Or if preferred, dip each banana bite into the chocolate, coating halfway.Place back onto the lined tray and sprinkle with any toppings.Freeze again until the chocolate is set.Store in an airtight container in the freezer for up to 2 weeks.Enjoy straight from the freezer or let sit for 2–3 minutes to soften slightly.
