Ingredients
2mediumavocados, peeled and deseeded
1mediumripe banana
1/2cupdesiccated coconut
1/2cupchocolate chunks or chips (optional)
1/4cupprotein or collagen powder
1/4cupcoconut oil, melted
1/4cuphoney or maple syrup
2limes, juice and zest
Instructions
Line an 8 x 8-inch baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.Peel the banana and add to a food processor along with the avocado flesh, desiccated coconut, protein powder, coconut oil, honey, lime juice and zest. Blitz the ingredients together until a smooth glossy mixture forms.Stir through the chocolate pieces ensuring they are evenly distributed throughout the mixture.Pour the mixture into a lined baking tin, ensuring the mixture reaches into all four corners and is smooth on topPlace in the freezer to set for a minimum of two hours before slicing into 12 bars or more squares depending on the size you prefer.Store bars covered in the fridge. They will be fresh for up to 5-7days.These protein bars also freeze very well! Seal them inside an airtight container or Ziploc bag for up to 3 months.
