Ingredients

  • 1 cup raw cashews, soaked 3+ hours and drained (or 10 minutes in hot water)
  • 1/2 cup desiccated coconut
  • 1/2 cup vanilla or unflavoured protein powder
  • 2-3 tablespoons maple syrup or honey
  • 1 tablespoon coconut oil, melted
  • 1 teaspoon vanilla extract
  • Pinch of sea salt
  • 1/4 cup freeze-dried raspberries, lightly crushed

Optional

  • 2-3 tablespoons white chocolate chips or melted white chocolate for drizzle

Instructions

  • Add cashews, coconut, protein powder, maple syrup, coconut oil, vanilla and salt to a food processor.
    Blend until a soft, sticky dough forms.
    Gently fold in the crushed freeze-dried raspberries.
    Roll into 8-10 balls (more or less) depending on preferred size.
    If desired, drizzle or dip in melted white chocolate.
    Chill in the fridge for at least 30 minutes to firm up.
    Store in an airtight container in the fridge for up to 7 days
