1 1/2cupspeanuts, roasted, salted, chopped
1 1/4cupswhite chocolate chips
1/2cupcashew (or any other nut) butter
2tablespoonscoconut oil
1/4cupprotein or collagen peptides powder
1/2cuprainbow sprinkles
Instructions
Line a baking tray or large dish with parchment paper and set aside.Set a heatproof bowl over a pan of barely simmering water. Add the cashew butter, white chocolate chips and coconut oil and stir until melted and smooth.Add the peanuts and protein powder and coat in the chocolate mixture stirring until everything is well combined. Scoop out about 1-2 tablespoon-size clusters at a time onto the lined baking sheet. Top with sprinkles.Makes around 14-16 clusters, depending on your preferred size. Place in fridge to set. Once cool, store in an airtight container.Store leftovers in the refrigerator for up to about 7 days. So you can enjoy a cluster every single day during the week! Then if you want to keep them for longer, you can store them in an airtight container in the freezer for about 3 months. And when you want to eat one, you can either eat it frozen or let it thaw for a little bit in the fridge to soften up.
