White Chocolate Peanut Butter Protein Balls

The perfect pick-me-up for when you need a quick and satisfying snack. Packed wit protein-rich peanut butter, oats, coconut, protein powder and coated in white chocolate. Loaded with flavor and energy to keep you going all day long.

Ingredients

  • 1 cup rolled oats
  • 1/2 cup coconut flour (or more oats)
  • 1/2 cup peanut (or any other nut or seed) butter
  • 1/2 cup desiccated coconut
  • 1/4 cup honey or maple syrup
  • 2 scoops protein or collagen powder
  • 1 teaspoon vanilla extract

Chocolate Coating

  • 1 cup white chocolate chips
  • 1 tablespoon coconut oil
  • 2 tablespoons sprinkles (optional, but not really!)

Instructions

  • Place oats in a food processor and process until broken down into oat flour. Add peanut butter, coconut, honey, protein powder, vanilla extract and process until a dough is formed scraping the sides of the food processor bowl down if necessary.
    Using a 1 tablespoon scooper, scoop out dough into around 16-18 balls (or more smaller ones) then roll between your palms to form the balls. Place in freezer for one hour. Check that they are firm as they will fall apart when dipping in the melted chocolate if they are not fully frozen.
    When time is almost up for the frozen balls, melt the chocolate coating.

Chocolate Coating

  • Place chocolate chips and coconut oil in dish and microwave with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once the chocolate is melted, dip each ball into it using one or two forks to turn the ball around in the chocolate so it all gets coated. Or you can hold it over the bowl and spoon the melted chocolate over letting the excess drip back into the bowl.
    Repeat this process until all the balls are coated in chocolate. Sprinkle the balls with sprinkles before the chocolate sets.
    Transfer the balls to the freezer for 20 minutes or until the chocolate has set.
    Store the balls in an airtight container or bag in the freezer for up to 3 months.
